Buttermilk is great in baking because it gives baked goods density, but also keeps them moist- think biscuits anyone? Check out a few of the recipes below if you need more mouthwatering inspiration!
Blueberry Scones
In a medium bowl whisk together 4.75 cups flour, 1 tbsp. baking powder, .5 cup sugar, 1.25 tsp. salt. Use a pastry cutter to cut in 1 cup and 1 extra tablespoon cold butter, until pea sized bits of dough are formed. Mix in 1.5 cups buttermilk, 1 tsp. lemon zest. When dough is solid, gently fold in 2 cups blueberries (or swap for chocolate chips or fruit of choice). Form 2 discs of dough and cut into triangles. Place on a greased baking sheet 1-2 inches apart. Melt 2 tablespoons of butter and spread overtop of the scones. Sprinkle with sugar and bake at 400 degrees for 20 minutes or until golden brown.
Pumpkin Pancakes
In a medium bowl, whisk together, 1.75 cups flour, 2 tsp. baking powder, .5 tsp salt, 1.5 tsp. cinnamon, .75 tsp ginger, .25 tsp nutmeg, .25 tsp cloves, .25 cup brown sugar. Make a well in the center and set aside. In a smaller bowl, whisk together 1 cup pumpkin puree, 1.5 cups buttermilk, 2 eggs, 1 tsp vanilla, and 3 tbsp melted butter. Pour into dry ingredients bowl and whisk together until just combined. Grease a hot griddle, pour batter to form pancakes and cook until golden brown on both sides. Enjoy!
Easy Chicken Marinade
In a large bowl, whisk together 3 cups buttermilk, 1 tbsp. parsley, 1 tbsp dill, 1 tsp garlic powder, 1 tsp onion powder, .5 tsp salt, and .5 tsp pepper. Add in 2 lbs chicken turning to coat. Refrigerate overnight, or for at least 2 hours. Bake chicken at 350 degrees until the juices run clear.
